One of my favorite aspects of fall is spending time in the kitchen. After a very long, hot summer that never seems to end, I look forward to cooler temps so that I can use my oven to cook hearty meals. Beef stew, baked chicken, roasted vegetables, chicken pot pie - those are some of my favorites. Tonight I made a chicken pot pie with the left over chicken and roasted vegetables from Sunday's meal. I've learned that it is just as easy to bake 2 chickens as it is to bake one. It was wonderful. A perfect fall meal.
